Flavors of Thailand: A Foodié’s Guide
Join me as I dive into the culinary journey Jeff and I experienced on our honeymoon in Thailand! We eloped in August of 2024 and left to Thailand just a couple months later in October. Thailand has always been on our bucket list. Despite all the traveling Jeff has done throughout his life, he has never been to Asia, so that added another level of excitement to the trip!
I’ll share must-try food tours that let you dive into local markets in Thailand, where we first tasted authentic street food, and unforgettable cooking classes, where we learned to balance the sweet, spicy, sour, and savory flavors that define Thai cuisine. Perfect for food lovers looking to recreate our foodie adventure in Thailand!
I also included a couple BONUS items as well that are not food-related!
Let’s get started!

Why Chiang Mai?
Before we dive into the classes and tours… a little background on Chiang Mai, and why we chose to visit this beautiful city in Thailand.
Chiang Mai, Thailand’s cultural heart, uniquely blends history, cuisine, and scenic beauty. Founded over 700 years ago as the capital of the former Lanna Kingdom, it boasts ancient temples like Wat Phra That Doi Suthep nestled in the mountains.
With its historic charm, vibrant night markets, traditional festivals, and Northern Thai cuisine, Chiang Mai offers an exciting escape from city life. Its rich heritage and peaceful surroundings make it an ideal destination for those seeking a laid-back, less commercialized vacation.
Chiang Mai:
Food Tour with A Chef’s Tour
Now, onto the food tour in Chiang Mai! We did two food tours with A Chef’s Tour—our first in Chiang Mai and the second in Phuket. They provide immersive experiences led by local culinary experts who showcase the city’s food scene.
Our food tour in Chiang Mai kicked off with our group boarding one of the city’s iconic “rod daeng” trucks. It was awesome to be driven around instead of walking everywhere! This allowed us to explore more of the city while conserving energy for our other travel activities.
We kicked off the food tour on a high note, sampling what are undoubtedly popular choices among foreigners (and a bit less “adventurous”), including crispy pork belly and a variety of other meat dishes.
This dish, pictured, was Burmese Chickpea Tofu, called Tohu Thoke. We ate it at a vegan restaurant stop, along with two other vegan dishes.
Throughout the tour, our guide, Tree, shared insights into Thai cooking techniques, ingredients, and the culinary traditions that make Northern Thai cuisine so unique. A Chef’s Tour designs these experiences to bring travelers up close with authentic flavors, which is ideal for food lovers who want a deeper understanding of Chiang Mai’s food culture.
As a side note, we were thoroughly impressed by our tour guide’s English. We had no problem communicating with him whatsoever. He made it easy for us to ask plenty of questions and gain deeper insights into the culture. We felt compelled to give him a tip at the end for the outstanding job he did.
One of the times we asked him a lot of questions was at the local market he brought us to (pictured). The array of spices, produce, and meats was overwhelming, and I would have felt very intimidated going alone. We loved our time at the market; it felt like a classroom (in the best way possible), and we learned so much! On their website, A Chef’s Tour said, “You won’t be trying Pad Thai or red Thai curry on this tour,” and they were definitely right!
Amid all the delicious food we tried, we also had the opportunity to try more unique items such as fried crickets and larvae, exotic fruits, and even raw fermented pork! The final stop on our tour was for dessert of course: taro sago.
Check A Chef’s Tour out while you’re in Thailand! More on them later in this blog post at our food tour with them in Phuket.
Chiang Mai:
Cooking Class with BaanThai Cookery
BaanThai Cookery is a well-regarded cooking school located in Chiang Mai, Thailand, known for its immersive culinary experiences. Founded by a local chef, it is now owned and ran by Boom, the founder’s sister-in-law. Boom is incredibly sweet, knowledgable, and has such a positive energy!
The school offers hands-on cooking classes that focus on traditional Thai cuisine, utilizing fresh ingredients sourced from local markets. If you’re looking for a class that focuses on technical skills to help you cook Thai food at home, this is the perfect choice for you.
In this class, you can expect to learn how to prepare a variety of iconic dishes while gaining insights into Thai cooking techniques and the cultural significance of the ingredients used. Our class started with a market tour, where we learned how to select the freshest produce and herbs.
Below are photos of just a few of the many dishes we made!
Mango Sticky Rice
Khao Soi
Pad Thai
Baan Thai Cookery had a wide variety of dish options, allowing us to choose what we wanted to cook. Since I wanted to recreate the dishes back home in the U.S., I appreciated that the options were familiar and approachable recipes, because the ingredients would be easier to find at home.
Jeff and I decided upon the following dishes to cook:
- Pad Thai
- Fried Egg Rolls
- Tom Yum Goong
- Khao Soi
- Mango Sticky Rice
As you can tell, there was plenty to eat! So if you do this cooking class, come hungry! Most cooking classes have you make all the dishes before eating, but here, you cook and eat each dish right after making it.
We loved our time at BaanThai Cookery. Boom and her team were so sweet, and the environment was so upbeat. 10/10 recommend!
Chiang Mai:
Into The Wild Elephant Camp
I forgot to mention earlier that my husband, Jeff, planned our entire honeymoon! Since seeing elephants is a classic tourist activity, he made sure to include it on our to-do list. We visited Into the Wild Elephant Camp in Chiang Mai, and were so glad we did. They offer an ethical experience to connect with elephants in their natural habitat. Their eco-conscious sanctuary prioritizes the elephants’ welfare, focusing on conservation and rehabilitation rather than entertainment.
It was heartbreaking to see elephants in small cages along the roads in Thailand, making me wonder about their daily lives. Thankfully, Into the Wild Elephant Camp allows elephants to live freely, true to its name. And unlike other camps, Into the Wild prohibits riding to ensure respectful treatment of the elephants. The guides share insights on their behavior, history, and conservation, offering a meaningful experience that prioritizes their well-being.
Our day began with a convenient pickup service provided by Into the Wild right from our hotel in Chiang Mai (side note: we stayed at Na Nirand Resort and could not recommend it more. Very affordable, incredible service, and beautiful location!). You can see me and Jeff in the rod daeng truck that they picked us up in!
After a scenic hour-and-a-half drive through the winding roads of the mountainous countryside, we arrived at a breathtaking sanctuary, tucked away in a peaceful, almost paradisiacal setting. My jaw seriously dropped when we turned the corner and saw the camp.
The camp was nestled by a clear, flowing river and surrounded by lush greenery and banana trees, which the staff harvest daily to feed the elephants.
As we arrived, it felt like the elephants knew the routine—they slowly approached in a line, ready to greet us and enjoy their morning banana feast. We had the chance to feed them by hand, feeling their gentle trunks grabbing the bananas.
Once breakfast was over, the elephants began to climb a nearby hill, munching on trees as they went. We followed them up a short, scenic trail, which allowed us to observe them freely in their element.
Afterward, we joined them for a playful mud bath, where we were able to splash and bathe alongside these gentle giants. Our experience wrapped up with a delicious lunch provided by the camp, offering us a taste of local flavors. Finally, they drove us back to our hotel, making the whole experience seamless and stress-free.
Why Phuket?
After our time in Chiang Mai, we took a plane down to Phuket. One of the highlights was getting to see the stunning Phi Phi Islands. Crystal-clear water, perfect white sand, and such a peaceful vibe. It felt like we’d stepped into a postcard.
In Phuket, we checked out the city Patong, famous for its lively nightlife and bustling Patong Beach with water sports and beach clubs. The area is full of bars, clubs, and strip joints, which wasn’t really our vibe since Jeff and I don’t drink and aren’t huge partiers. But we did enjoy going to a Muay Thai fight, which Jeff especially loved as an MMA fan. Phuket really has something for everyone, from wild nights to relaxed beach days.
Phuket’s Old Town has its own charm, too, with its colorful Sino-Portuguese buildings, cozy cafés, and night markets full of delicious food and unique finds. We bought most of our souvenirs in Old Town. Street food in Phuket is a must-try, and you’ll find everything from mango sticky rice to grilled seafood. I’ll touch more on this in my next section.
Phuket:
Food Tour with A Chef’s Tour
Southern Thai food is renowned for its bold flavors, thanks to the region’s mix of Thai, Malay, Burmese, and Chinese influences. On A Chef’s Tour in Phuket, you explore local markets, sample street food favorites, and visit hidden gems that showcase traditional Southern Thai dishes. We tried many delicious local specialties: Hokkien noodles, intricate chicken dumplings shaped like a rose, and savory curry puffs (karipap in Thai).
Our guide, Nam, is a Phuket local, and shared background on each dish, explaining the ingredients and cooking techniques that make Southern Thai cuisine so distinctive.
It’s a full sensory experience that goes beyond eating—you learn about the history and traditions that make this region a true culinary treasure. It’s the perfect way to experience Phuket’s authentic flavors in just a few hours.
Patong and Bangkok:
Pum Thai Cooking School
Located in various spots, including Patong (a region in Phuket) and Bangkok, Pum Thai Cooking School provides a cozy and friendly atmosphere. Whether you’re a beginner or a seasoned cook, it’s a great place to immerse yourself in Thai cuisine. Founded by Pum, a talented chef passionate about sharing her love for Thai food, the school offers hands-on cooking classes that are both fun and educational.
Jeff and I had a blast attending their class in Phuket—it really feels like a party! The upbeat instructors even have a fun song and dance that they do with the class. I highly recommend this class if you’re traveling with a larger group, as it’s both enjoyable and efficient. Not all cooking classes are best fit for bigger groups, but this one definitely is.
During the class, you are guided step-by-step through the preparation of a few dishes of your choice. We chose to make Green Curry, Tom Yum Goong, and Tom Kha Gai (pictured). It was a lot of food. We were definitely full by the end!
What makes Pum Thai Cooking School so great is the variety of cooking courses available. You can choose a course based on the number of dishes you want to cook, the types of dishes, and what you hope to learn from the class.
At the end of the one-hour class, we enjoyed the delicious meal we had prepared. We were surprised we could make three dishes in such a short time! The class was great because we didn’t have to prep too many ingredients. It was truly a memorable experience!
Phuket:
Cooking Class with Phuket Thai Cooking Academy
If you’re in the heart of Phuket, Phuket Thai Cooking Academy is a fantastic place for anyone looking to create a mix of familiar and perhaps less-familiar Thai dishes. For example, I didn’t know Deep-Fried Bananas and Spicy Chicken Salad were Thai food before this class!
Jeff and I were so glad we chose to attend this class, especially since it ended up raining heavily in Thailand that day. Having a few indoor activities planned is always a good idea, and a cooking class is the perfect way to spend time while staying dry! Plus, the cooking class kindly provides pick-up and drop-off as well.
At the academy, the instructors are not only skilled chefs but also passionate about sharing their knowledge of traditional Thai cooking. The atmosphere is warm and welcoming, making it easy to feel at home as you learn. I loved seeing them joke around with Jeff, because they loved him and thought he was hilarious.
The class began with a trip to a local market (pictured), where you can pick out fresh ingredients and get acquainted with various herbs and spices used in Thai dishes.
The unique spices and produce of Thai cuisine truly set it apart, creating a vibrant tapestry of flavors that is both aromatic and complex. Ingredients like lemongrass, galangal, and kaffir lime leaves bring a freshness that is distinct to Thai dishes, while fiery chilies add just the right kick.
It was such a treat to have an instructor guide us through these unique ingredients, explaining their uses and benefits in each recipe. Their expertise made it easy to understand how to balance flavors and incorporate these spices into our cooking, enhancing our appreciation for the rich culinary traditions of Thailand.
Once back at the academy, we got hands-on experience preparing a range of authentic Thai dishes. A unique value-add of this class is that it allows you to cook different dishes from your group. This meant that Jeff and I could each make separate recipes, and not only expand our cooking repertoire but also enjoy the variety of meals we had created together after the class.
Nothing beats the satisfaction of enjoying your own cooking, especially in such a fun and engaging environment!
Here’s a photo of Jeff being silly. In the photo you can see some of the many dishes we created: Pineapple Fried Rice, Mango Sticky Rice, Deep-Fried Bananas, Papaya Salad, Egg Rolls, Massaman Curry, and more.
Phuket:
Tiger Muay Thai and Tiger Grill
Tiger Muay Thai gym in Phuket is a renowned training facility that attracts martial arts enthusiasts from all over the world. For Jeff and me, visiting the gym was a highlight of our trip, especially since Jeff is such a huge MMA fan. We loved visiting the gym where athletes were training. Some of the biggest UFC fighters who have trained at Tiger Muay Thai include Robert Whittaker, Petr Yan, Alexander Volkanovski, and Valentina Shevchenko.
While we were at Tiger Muay Thai, we visited Tiger Grill, which is an on-site restaurant. It offered us a refreshing break from our vacation diet, since we didn’t get many fruits and veggies in amidst all our food tours and cooking classes! More on this below.
The grill provides healthy food options that cater to its health-conscious visitors. The menu features a variety of wholesome choices, including fresh salads, lean proteins, and grain bowls, making it easy to refuel after a workout or a day of exploring.
Jeff ordered the Tuna Poke Bowl (pictured). It included marinated tuna, fresh vegetables, and a base of rice, all drizzled with a light sauce that complemented the ingredients perfectly. I ordered the Chipotle Chicken Bowl. We both also ordered a healthy protein smoothie. So yummy!
Jeff and I also attended a Muay Thai fight while we were in Phuket, and we were surprised to see that half the card featured children and teenagers. Despite their young age, we were genuinely impressed by their passion and resilience in the ring. I have pictures of a fight below.
We so loved our time in Thailand and hope you have a chance to go someday if you haven’t gone already! The culture is so rich, the food is delicious, and the people are so kind. We are already excited to go back soon!
