Miso & Sesame Oil Chocolate Lava Cookies

Miso & Sesame Oil Chocolate Lava Cookies are a decadent dessert combining rich, dark chocolate with the nutty-sweet flavors of the roasted sesame seeds. When you bite into the cookie, you will find a gooey, molten center surrounded by a cake-like outer shell, perfect for indulging in a sophisticated twist on classic chocolate lava cakes.

The nutty roasted sesame seeds on the outside of the cookie play a crucial role in balancing the flavors of the miso and dark chocolate center, creating a harmonious taste experience. Olive oil not only contributes to the moist and tender texture of the cookies but also imparts a subtle fruity and peppery note that complements the miso.

What is Miso?

Miso, a traditional Japanese seasoning, is a fermented paste made from soybeans, salt, and koji (a type of mold used in fermentation). This versatile ingredient is a cornerstone of Japanese cooking, bringing a rich, savory flavor known as umami to a wide variety of dishes. Miso is incredibly versatile and can be used in a variety of dishes:

  • Miso Soup: The most well-known use of miso, this comforting soup combines miso paste with dashi broth, tofu, seaweed, and green onions.
  • Marinades and Sauces: Miso adds depth to marinades for meats and fish, and can be used to create flavorful sauces for vegetables and noodles.
  • Dressings: Mixed with ingredients like vinegar, sesame oil, and honey, miso makes a delicious salad dressing.
  • Baking: Miso can even be used in baking to add a unique umami flavor to cookies, cakes, and frostings.

There are several types of miso, including:

  • White Miso (Shiro Miso): Mild and slightly sweet, white miso is fermented for a shorter period and has a lighter color.
  • Red Miso (Aka Miso): With a longer fermentation process, red miso has a stronger, more robust flavor and a darker color.
  • Mixed Miso (Awase Miso): A blend of white and red miso, offering a balanced flavor profile.

These miso cookies are rolled in sesame seeds with a dark chocolate lava filling. They’re a fusion of savory miso and nutty sesame, concealing a luscious, molten dark chocolate center.

Ingredients

Units Scale
  • 3/4 cup heavy cream
  • 10 oz dark baking chocolate
  • 1 cup olive oil
  • 1 1/4 cups brown sugar
  • 2 eggs
  • 1 tbsp white miso paste
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tbsp cinnamon
  • 1/3 cup roasted sesame seeds for rolling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Make the chocolate ganache by simmering heavy cream in a pot for 3 minutes. Remove from heat, add dark baking chocolate, and stir until combined. Chill in the fridge to harden.
  3. In a large mixing bowl, beat together olive oil, brown sugar, egg, egg yolk, miso, and vanilla extract until combined.
  4. Add the flour, baking powder, and cinnamon, and beat again until fully mixed. Chill the dough in the fridge for about 1 hour.
  5. Flatten 2 tbsp of chilled dough, place 1 tbsp of ganache in the center, and wrap the dough around it, sealing the ganache inside.
  6. Roll the top of each cookie in roasted sesame seeds on a plate, ensuring they stick without completely covering the cookie.
  7. Repeat steps 5 & 6 for each cookie and place them on a greased baking sheet about 2 inches apart.
