Miso and Sesame Olive Oil Chocolate Lava Cookies

Description
These miso cookies are rolled in sesame seeds with a dark chocolate lava filling. They’re a fusion of savory miso and nutty sesame, concealing a luscious, molten dark chocolate center.
Ingredients
- 3/4 cup heavy cream
- 10 oz dark baking chocolate
- 1 cup olive oil
- 1 1/4 cups brown sugar
- 2 eggs
- 1 tbsp white miso paste
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tbsp cinnamon
- 1/3 cup roasted sesame seeds for rolling
Instructions
- Preheat the oven to 350°F (175°C).
- Make the chocolate ganache by simmering heavy cream in a pot for 3 minutes. Remove from heat, add dark baking chocolate, and stir until combined. Chill in the fridge to harden.
- In a large mixing bowl, beat together olive oil, brown sugar, egg, egg yolk, miso, and vanilla extract until combined.
- Add the flour, baking powder, and cinnamon, and beat again until fully mixed. Chill the dough in the fridge for about 1 hour.
- Flatten 2 tbsp of chilled dough, place 1 tbsp of ganache in the center, and wrap the dough around it, sealing the ganache inside.
- Roll the top of each cookie in roasted sesame seeds on a plate, ensuring they stick without completely covering the cookie.
- Repeat steps 5 & 6 for each cookie and place them on a greased baking sheet about 2 inches apart.
- Bake the cookies for 10-12 minutes, or until they are set.
