Ingredients
For Cookie Base:
- 1 cup unsalted butter, cold and cubed
- 2 large eggs
- 2 3/4 cup all-purpose flour
- 1 tbsp cornstarch
- 1 tsp baking powder
For Frosting:
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup white miso paste
- 1 tbsp maple syrup
- 2 cup powdered sugar
- 1 tsp vanilla extract
- Chocolate shavings for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a baking sheet.
- In a large bowl, beat the butter and sugar until light and fluffy. Beat in the eggs until well combined.
- Gradually add the flour, cornstarch, baking powder, and vanilla extract, mixing until fully incorporated. Chill the dough in the fridge for about 1 hour.
- Roll the chilled dough into 4-inch balls and place them about 2 inches apart on the prepared baking sheet.
