Nothing says nostalgia to me more than homemade dumplings, known as “gyoza” in Japanese. I have many memories of folding dumplings with my mom growing up.

Dumpling sauces are common in Japan, however, the sauces tend to be simpler compared to the more complex or heavily seasoned versions you might find in other cuisines. The standard Japanese gyoza sauce typically consists of soy sauce with an optional drizzle of rayu (chili oil) for a spicy kick.

Unlike in Chinese or Korean cuisine, where dipping sauces can feature strong flavors like black vinegar, garlic, or chili paste, the Japanese approach often highlights balance and simplicity.

Whichever route you choose to go, the process is straightforward: simply mix the ingredients in a small bowl, taste, and adjust until you’re happy with the balance of flavors. The sauce can be made ahead and stored in the refrigerator for a few days, allowing the flavors to meld even more.
