Description
Scissor-cut noodles are hand-crafted noodles made by cutting dough directly into boiling water or broth, resulting in irregular shapes that perfectly capture sauces and broths.

Dough:
- 2 cup flour
- 1/2 cup water (use more or less depending on how dry your dough is–you want it to be decently stretchy/malleable, but not too wet)
- 1/2 tablespoon salt (plus an extra teaspoon for the boiling water)
Optional Sauce:
- 1 lb ground beef
- 1 cup shimeji mushrooms (although any type of mushrooms work)
- 2 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 3 tablespoon chili crisp (adjust according to your spice preference)
- 1/2 tablespoon granulated sugar
- 1 teaspoon roasted sesame oil
- Green onions for garnishing (optional)
Instructions
- Attach the dough hook to your stand mixer (if you do not have a stand mixer, you can knead with your hands for 10 minutes instead of using a stand mixer for 6-8 minutes for the same results).
- In the mixing bowl, combine all dough ingredients (flour, water, salt). With the mixer on low speed, knead with the machine on speed 2 for 6-8 minutes until the dough is smooth and elastic.
- To a large pot of boiling water with a teaspoon of salt over medium-high heat, using scissors, cut your dough ball into thin strips about 1/2 in. long into the boiling water, allowing the noodles to cook for 3-4 min., depending on thickness.
- Strain noodles and drizzle a little cooking oil to the same pot. Add the ground beef and mushrooms and cook until the beef is browned.
- Place the noodles back into the same pot with the beef and mushrooms. Mix with the rest of the sauce ingredients and enjoy.
